Understand the market dynamics for the following food segments in the US, focused on the foodservice distribution channel: (1) Dry blends (including dessert mixes, gelatins, cold/hot beverages, gravy) (2) Liquid condiments and dipping portions (including sauces & dressings, jams/jellies & peanut butter, syrups), (3) Dry condiments (including salt & pepper, parmesan cheese, non-dairy creamer). Specifically, for each of these 3 food segments we look for:
1) Mapping of the value chain: identify value chain links and characterize value chain by specifying concentration of business in each link and map profit pools
2) Historical and projected market size (volume and $), by distribution channel (food service, retail)
3) Competitor landscape, within the foodservice channel, and across the value chain: market shares, size of competitor, product lines, go-to market strategy, distribution network and a general profile of competitor
4) Pricing/gross margin dynamics
5) SWOT analysis
